Baked Cod Fillet



Serves 4

Ingredients

Fish

  • 1 to 1 1/2 pounds Cod fillet
  • a little butter
  • seasoning
  • a little lemon juice
  • 1/4 cup of milk

White Sauce

  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • fish Liquid
  • milk
  • seasoning
  • A pinch of nutmeg

Garnish

  • Chopped Parsley
  • Sprigs of Parsley

Directions

Preheat oven to 400° F.

Wash and skin the fish, cut it into 4 pieces and put it into a buttered ovenproof dish.

Season well, and sprinkle with lemon juice. Pour the milk around the fish, and cover with a lid or foil. Bake for 15 to 20 minutes.

Melt butter in a pan and stir in the flour. Cook without browning for 1 minute. Drain the liquor from the fish and add enough milk to make 1 cup.

Stir the liquid into the butter and flour mixture, bring to a boil, and cook for 1 minute, stirring constantly. Add seasoning and nutmeg.

Put the fish on a serving dish, coat with the sauce amd sprinkle with chopped parsley and sprigs of parsley.
